Stuffing diameters

Recommended stuffing diameters according to Fibrous casing size are shown in the table below. They may vary depending on:

• The type of product stuffed,
• The type of the stuffing machine used (clips resistance),
• The cooking process.

(1) As from caliber 107, all Fibrous casings have an internal and external viscose treatment especially adapted for the stuffing of long meat pieces.

(2) For shirred sticks of usual presentations to be soaked.
