Viskase Corporation now offers CARAMEL SHIRMATIC® Fibrous Casings that allow development of color from golden to dark brown on the surface of processed meat products.

The benefits of CARAMEL Fibrous Casing include the following:

• Imparts uniform color that develops during thermal processing.
• Eliminates the need for messy, labor intensive dipping/spraying operations.
• Provides all the advantages of NO-SOAK® Shirred Fibrous Casing.
Finished product labels require one of the following disclosures:

• "Artificially colored" as a prominent disclosure and "caramel coloring" in the ingredient statement
     OR
• "CARAMEL colored" as a prominent disclosure.

CARAMEL SHIRMATIC Fibrous Casings are available size 2 1/2 through 12 in:
• SHIRMATIC E-Z LOAD®
• SHIRMATIC 600
• SHIRMATIC 100

NOTE: CARAMEL Fibrous Casing is not available in SHIRMATIC 100XL or 600XL formats.

Available Treatments

There are twelve different treatment levels. CARAMEL P Light is the lightest golden brown; the color intensity deepens with each treatment level. The darkest, brown color is the CARAMEL B Dark.
