The following are suggestions for using NOJAX Casing successfully to make small diameter sausages. Stuffing Never soak NOJAX Casing. Set up the stuffing equipment with the proper stuffing horns, chucks and linking chains. If you set the equipment up incorrectly, there can be problems with breakage or mislinking. Stuff within the recommended stuffing diameters. If you over stuff you may have breakage, peeling problems or overweight product. If you under stuff, you may have wrinkled or underweight product. Processing It is strongly suggested to process the casing right after stuffing. Waiting for hours before processing can lead to underweight product or peeling issues. If you are using Regular NOJAX Casing, use a processing humidity that is 50% or higher. Lower humidities may result in peeling difficulties. If you are using E-Z PEEL NOJAX Casing, use a processing humidity that is 30-35%. It is not recommended that E-Z- PEEL® NOJAX Casing be used with high acid, liquid smokes or acid showers. The pH should be 5 or higher, otherwise the effectiveness of the E-Z PEEL will be decreased. Peeling Be sure the product temperature is less than 40°F (4°C) to increase peeling performance. Generally, colder product is easier to peel, however below 24°F (-5°C) product can be more difficult to peel. Set up the peeler properly to assure good peeling performance. Do not store the product in a blast chiller prior to peeling; it may cause the product surface to dry out. Typically, moist product is easier to peel than dry product. It may be beneficial to wet the casing if peeling is difficult.
